"In 2019 we made 'Corail' as there wasn't enough fruit from each old parcel to fill a tank per-vineyard. When you work without sulphur, it's hard to make something clean when there's inertia fermenting, and very small zero-sulphur cuvees are really hard to finish without too much volatility."

Winemaking: "We decided at harvest with yields being so low, to add all the fruit from the Goutte d'Or vineyard, all our old vines (Pinot Noir planted in the 1950's, Aligoté planted 1943, Gamay planted in 1920), whole bunch in one tank. We left it fermenting for a week with no pigeage, just a little bit of fresh juice poured over the top occasionally. Then we pressed it, and it aged for a year in barrel. It's a super light red, and probably a one-off!"
