"An Assemblage of all the Pinot Noir parcels except Vaucuriens and Goutte d'Or. They're all located quite close to each other so were picked and fermented at the same time. When we tasted each vineyard, none stood out particularly to do a micro cuvee, so in the end, everything was blended into this one. But we were very pleased with 2019; it was bad for frost, but there were so few grapes per vine that it gave such fantastic, interesting juice."

Winemaking: Grapes loaded as whole bunches for 1-3 weeks maceration depending on the vigour of the vineyard and the speed of fermentation. Footstomped at the end of fermentation before a manual basket pressing. "All our reds we basket-press, we load it in the afternoon, press slowly over the late-afternoon and the evening, overnight it continues to drip, we really like a super long press." Aged for 12 months in barrels before bottling with no additions. All movements in the cellar are done by gravity.
