From the Bernstein slope on solid granite. A one-off cuvee, that Max can probably only make once every 5 years when conditions are correct. There's a double-etymology pun here about malolactic fermentation, and the paw of Max's cat: Malo. What else does one expect from the Alsace school.

Winemaking: Hand-harvested from the steep Bernstein hill on solid granite. Basket pressed to 1000l Alsace tuns, with 300ml space for oxidation. 18 months ageing. Max wants to feel the acidity of the granite, but even in a cool year this south-facing parcel can reach 13%, so the timing here is key. For a cuvee of this purity, Max believes the conditions will only be right every five years or so.
