Aube is a wine picked from the two highest parcels in rare years
"The terroir of these two parcels is probably the most interesting of them, but they can lead to much more variable wines, so its not one that can be made every year. They're above Meloisey at the top of the hill before you reach the forest. On white marl mainly, alongside a little red clay. Being east south-east, they get the morning sun (Aube=daybreak) - it yields much more linear, mineral wines."

Winemaking: Hand harvested. A three week whole bunch maceration, footstomped at the end of fermentation before a manual basket pressing, aged for 12 months in barrels before bottling with no additions. All movements in the cellar are done by gravity.
"It's really a white wine terroir up there, so the wines can take a bit more time in ageing. They're often quite herbaceous directly out of barrel and become incredibly interesting with time."
"Most of these vines were planted in 1982, and they're the highest elevation parcels we work. We took it over in 2018, and pruned quite hard - back to just 4 buds per vine. We've done lots of ploughing and sewing cover crops, all to help with bringing back more vigour. Now it's producing really nice fruit."
