90-year-old Xarel·lo - bursts with wild grasses, dried apricot and lily. Rich, but tempered with a racy saline acidity through crunchy tannin.

Winemaking: Xarel·lo hand harvested from Sant Joan Samora - El Penedès at 150m altitude over clay-rich and calcareous soils. De-stemmed and crushed, fermentation on the skins for two weeks with punch-downs in the first week and only wetting the cap in the second. No pressing, the wine is free-run by gravity. Naturally cold settled over winter in stainless steel, bottled after seven months on the lees with no additions.

Lucy Chilvers organically farms 4.5 hectares in the El Penedès, Catalunya - making dazzling expressions of stubborn old vines grown at up to 400m elevation on clay-limestone. Lucy's journey in wine has taken her from restaurants in London and Brighton to the course at Plumpton, to working alongside Sasa & Ivana Radikon in Friuli before eventually finding a home in Catalunya. Through her four parcels, she works organically with a little sulphur and a handful of biodynamic treatments. In the cellar, she makes no additions.
