Winemaking: From the same parcel of Chardonnay that was once picked for 'Gaia'. A blend of the two vintages, both pressed directly and fermented with indigenous yeasts, the 2020 was aged in barrel for 18 months, the 2021 aged in barrel for six months. 2020 was an incredibly hot year, so Vincent intentionally picked the 2021 extra-early for a fresher blending partner. Bottled unfined, unfiltered and with no sulphur.
