Winemaking: Manual harvest, grapes have a 1 day cold maceration, Grenache & Carignan are vinified in steel as a carbonic maceration. Syrah is destemmed but not crushed, before a 2 week maceration. Pressed to concrete for elevage. Unfined & unfiltered.

Sulphur: 10mg/l added at bottling.
