Winemaking: Hand-harvested from two parcels over two distinct terroir. Pressed as whole-bunches, settled in tank and racked quickly to another to begin fermentation naturally. A-typically for Nantais Folle Blanche, Malolactic fermentation was allowed to complete. Aged for 6 months in a combination of stainless steel and glass-tiled tanks, underground. Bottled with a minimal addition of sulphur.
