It’s a fine line picking the right day to harvest the Chardonnay: unlike neigbouring growers, Eric prefers not to pick too-underipe. He has to hold his nerve, aiming for a little softness, without sacrificing the calling-card salty minerality or tipping over 12%.

Winemaking: Picked from a large vineyard over metamorphic rock. Pressed as whole-bunches, settled in tank and racked quickly to another to begin fermentation naturally. Malolactic fermentation was allowed to complete. Aged for 6 months in a combination of stainless steel and glass-tiled tanks, underground. Bottled with a minimal addition of sulphur.
