Winemaking: From a parcel located 8km from the sea in the Itata Valley, 150 year old Pais vines. Hand harvested and de-stemmed. Gentle crushed and left for a 3 week fermentation in concrete tanks. Pressed back to concrete for ageing. 20mg/l sulphur added at bottling.
