Winemaking: Hand harvested from a small plot of 38-year-old vines in the Test Valley, Hampshire. Grown organically with very little human manipulation. A 3 week whole-bunch maceration, before being gently pressed and aged in various sizes of neutral Burgundy barrels for 1 year. The wine was then syphoned out of barrel and bottled with a small amount of Triomphe juice from the 2021 harvest to spark secondary fermentation. No fining, filtration, or disgorgement.
