Winemaking: Vines 20-40 years old from parcels across Gradoli and Latera. Procanico is de-stemmed and macerated for the duration of fermentation, 15-20 days. Other varieties pressed directly to fibreglass for fermentation. Everything racked to oak barrels for 9 months ageing. Assembled and bottled unfined and unfiltered.
