Winemaking: Hand-harvested, whole bunches have a cold maceration overnight, pressed gently to stainless steel tank the following morning. Once alcoholic fermentation is complete, the lees are stirred occasionally over several weeks. Aged for 6 months on the lees, bottled in the spring.

With a family ancestry of owning vines in the area going back to 1546, there is a bit of history here. Now with 50 hectares, Christophe is all about the variation in soil across the Domaine.They cultivate several grape varieties: Chenin Blanc and Cabernet Sauvignon, which are planted on soils of shales and Armorican sandstones; as well as Cabernet Franc, which needs a regular water supply, planted on deeper soils such as clay-limestone. Faithful to his respect of the environment, he has committed to organic farming since 1996.
