Winemaking: With yields hammered by mildew in 2021, Yann had to turn to organic neighbours to source some negocé fruit to supplement the vintage. Ever-honest, he changed the name of Eden Edel to Assemblage in 2021 to delineate that it wasn’t domaine fruit.
Hand-harvested, pressed slowly and directly over six hours, varieties fermented separately in tank before blending and bottling with no additions.
