Picked early for acidity in 2022 as the Muscat raced along to maturity under hydric stress. Heady, textural, layered and mineral: continues to be one of our favourite macerations year on year.

Winemaking: Hand-harvested from an incredibly steep, north-east facing parcel in the hills of Tautavel. Muscat macerates in tank as 70% whole-bunch and 30% de-stemmed berries on top. Sourced from the same parcel, the final twenty litres from the overnight press of Grenache Gris for Paul's L'Extreme Blanc are added into the Cabirou tank for a little more available sugar. Maceration progresses for 2-3 weeks with hardly any battonage, before pressing back to stainless steel. Bottled unfined, unfiltered and with no additions after six months.
