Winemaking: Hand-harvested. 50% had 6 days on the skins before being pressed to old barrel, 50% was de-stemmed by hand and had a week's semi-carbonic maceration before being pressed to stainless steel. Assembled together after 6 months, bottled under crown cap to finish its final sugars. Slight spritz on opening.
