Winemaking: Hand harvested from vines between 40 - 80 years old. De-stemmed and macerated on the skins in fibreglass. After 10 days, half of the wine was pressed to chestnut barrels to continue fermentation and ageing. The other half finishes fermentation in fibreglass after 20 days, then pressed to oak. Aged 10 months in barrels.
