The second ever release from Ham Street, walks the delicate tightrope between light red and rosé with real elegance; beautifully detailed, crystalline and precise.

Vintage: 2021
Winemaking: Hand harvested from the four hectares at Ham Street. Vinified separately before blending. Pinot Meunier was pressed directly. Half of the Pinot Noir was macerated as whole bunches, the other half as a de-stemmed semi-carbonic maceration for two months. Chardonnay had a 5 day maceration on the skins. Everything was pressed to an amphora for seven months ageing, and topped up with 60 litres of their Pet Nat must (Bacchus, Pinot Noir, Pinot Gris). A tiny (20ppm) SO2 addition in December 2021, before bottling in spring 2022, unfined, unfiltered and with no further additions.
