Patrizia Montanari and Massimo Antonuzi attentively farm four hectares across a patchwork of parcels between Gradoli and Latera, overlooking the volcanic Lake Bolsena in Lazio. Inspired by the humble and pure wines Massimo’s grandfather produced from some of these parcels, all varieties are macerated gently, wines are raised in oak and chestnut barrels in limestone caves, with nothing added at any stage.
