Traditional method sparkling. Fine, delicate bubbles and the brioche you’re after in the palate. Chardonnay bringing floral top notes, Chenin the mineral backbone, Cab Franc brings lifted violets and Grolleau Noir a twist of spice.

Winemaking: Made in the traditional method. Hand harvested into small boxes to avoid crushing before filling the press. With fermentation monitored carefully, the wine is kept on the lees until the beginning of spring, when the wine undergoes it's second fermentation in bottle. The Cremant stays on fine lees for 24 months before disgorging at bottling.
With a family ancestry of owning vines in the area going back to 1546, there is a bit of history here. Now with 50 hectares, Christophe is all about the variation in soil across the Domaine.They cultivate several grape varieties: Chenin Blanc and Cabernet Sauvignon, which are planted on soils of shales and Armorican sandstones; as well as Cabernet Franc, which needs a regular water supply, planted on deeper soils such as clay-limestone. Faithful to his respect of the environment, he has committed to organic farming since 1996.
