Part of Lucy & Stephen's single-grain series, the Maris Otter has given their table beer a lot more texture, a fair bit of cloudiness in the glass, and a nice zing on the finish. An interesting experiment to demonstrate the influence grain can have on the beer in your glass.
Brewing: Primary fermentation was with their house yeast strain, and the beer was conditioned in can for three months before release. Unfined and unfiltered.

Malt: Organic Floor-Malted Maris Otter Barley, Wheat & Oats
Hops: Organic Wakatu & Nelson Sauvin

Notes on Maris Otter
Since its birth in 1966, despite its comparative rarity, Maris Otter has made more champion British beers than any other variety of barley. A cross of two grains, Pioneer and Proctor, it is the only grain to ever be bred with a brewhouse in mind, which is probably the secret of its success. It fell out of favour in the 80s and 90s in larger breweries, in favour of modern varieties that gave better yields. Happily, high yields are not a priority everywhere and certainly not at Futtle.
Named after a lane in Cambridgeshire that led from the Institute that developed the seed to the farm that first grew it (‘Maris’), and a favourite river animal of someone from the same laboratory (‘Otter’). This is the same name generator that christened the famous potato.
