Winemaking: The grapes are de-stemmed and placed in 30 hl truncated conical oak vats where they remain for about twenty days during which part of the spontaneous fermentation takes place in contact with the skins, without controlling the temperature. 3-4 re-paints or manual punching down a day are carried out as required. After racking, the ageing takes place in 20 hl oak barrels and a small part in 700 l tonneaux, for about 12/13 months and then 3 months in bottle. No clarification and filtration or addition of sulphur.

Young vignerons from Nizza Monferrato have finally made their dream come true and created a place where they can grow their own grapes: in the heart of the UNESCO site of Piedmont region. They farm Barbera, Moscato, Cortese and Chardonnay following a rather holistic approach for a low impact on the eco-system.
