Winemaking: Ziegental, or 'Goat Valley' was the first plot they owned, south east facing, very steep and surrounded by forest: the slowest to ripen and the last to pick. A cold maceration of 6 days in 300l boxes. Pressed to barrel, with the addition of a few whole bunches added. The wine spends the first 6 months of a 2 year elevage in barrel under flor. After fermentation is finished, they top up the barrels a little. If it's tasting too reductive, Konni will fill a demijohn and leave outside to slowly become oxidative, before adding back to the barrel. No fining or filtration. Barrels constructed locally from nearby Hartz forest oak.
Sulphur: 10 mg/l added.
