Basket pressed before fermentation is finished, it completes fermentation in tank. No filtration or fining.
Sulphur: 15mg/l added.
Soil: very rocky limestone
Konni and Evi had the chance to buy a plot of vines in Saxony-Anhalt, just west of Leipzig, in 2016 – beginning conversion to organic and biodynamic farming straight away. Both have other jobs, so all the work is at evenings and weekends. Now with around 2.5 ha of up to 80-year-old recovered vineyards and new plantings. Every detail is thought through even working with a local cooper using oak from the Harz mountains, no sulphur, in the cellar.
