Winemaking: From a 0.8 hectare co-planted plot, the two varietals were picked together, de-stemmed and left for a 7 day cold maceration. Pressed to stainless steel tank for spontaneous fermentation. Six to eight months of elevage in tank before bottling unfined and unfiltered.

Sulphur: 20mg/l added
