Winemaking: From two plots on rocky limestone, half from their 'goat valley' vineyard planted in 1933, and the other from slightly younger vines at 50 years old. Hand harvested, fermented on the skins for 8 days, and pressed during fermentation to retain a little reductive character and keep tannin low. No fining or filtration, bottled directly after a year’s elevage in barrel.

Konni and Evi had the chance to buy a plot of vines in Saxony-Anhalt, just west of Leipzig, in 2016 – beginning conversion to organic and biodynamic farming straight away. Both have other jobs, so all the work is at evenings and weekends. Now with around 2.5 ha of up to 80-year-old recovered vineyards and new plantings. Every detail is thought through even working with a local cooper using oak from the Harz mountains, no sulphur, in the cellar.
