50 year old Moscatel from one hectare, under regenerative organic agriculture for 5 years. 2/3 destemmed, 1/3 whole bunch. De-stemmed fruit is left to macerate in old oak for 10-12 days, whole bunch macerates for 8. Small quantity of sulphites were added to the whole bunch fruit part-way through maceration as a measure against volatile acidity after analysis. Only vintage so far with any addition of sulphur. Pressed slowly, outdoors in one batch before resting in simple lidded plastic barrels for 10 months. Unfiltered.
