Winemaking: Grapes are hand harvested early in the morning to retain freshness. 40% macerate in the press as whole bunches for 5 hours, 60% are pressed directly. Fermentation is kept at around 18 degrees with circulated water to help retain fresh aromatics. Aged on the lees for 4 months before bottling.

Sulphur: 50mg/l added

Soil: Sandy clay
