Not being fans of the ‘faceless’ Dolcetto of their region, Pauline & Francesco nudge it toward a less typical, more lively direction. An even longer carbonic maceration in 2020 to push it further.

Whole bunch carbonic maceration in steel for 20 days, before pressing and continuing fermentation for 2 weeks. Aged in concrete tanks for 8 months. No filtration, no added sulphur.

Young vignerons from Nizza Monferrato have finally made their dream come true and created a place where they can grow their own grapes: in the heart of the UNESCO site of Piedmont region. They farm Barbera, Moscato, Cortese and Chardonnay following a rather holistic approach for a low impact on the eco-system.
