Winemaking: Braucol from 30 year old vines. Hand harvested, no added yeasts. Braucol is destemmed and macerates for two days, with the free-run juice used for the pet nat (press juice saved for L’Ancetre) Bottled with 25g residual sugar to finish fermentation in bottle. Disgorged but unfiltered, unfined, and with no added sulphur.

Vignereuse (Marine Leys)

Marine works with a mix of local varieties: Mauzac, Loin de l’Oeil, Braucol, Duras and then some Gamay, and Syrah (the most commercial of the varieties, and Gaillac used to sell a lot of bulk must and juice to other regions). She tends to 5 hectares and works organically.
