Winemaking: Picked from the same plot on steep north facing slopes high in the hills of Corbières, hand harvested early. 50% de-stemmed and 50% whole bunch – macerated on the skins for 10 days and basket pressed back to steel. Aged on the lees with daily battonage during the fermentation and ageing. Bottled unfined, unfiltered and with no additions on March 5 2023.
