Winemaking: Grapes are picked in the early morning to retain freshness and aromatics before pressing directly. Fermentation begins slowly with the juice still at a cool 16 degrees before the wines rest for 20 days. Racked into concrete for ageing, blended together and bottled unfiltered in spring.
Soil: Limestone, clay, sand, and silt deposited by the Rhône
Sulphur: 70mg/l at bottling
