Winemaking: "After we press the grapes, a bit of sugar (and aromas!) remain in the skin of the grapes. We separate the skins of the stems, and let the skins ferment during a couple of months in small tanks. After that we distill them in our own alembic. They are distilled two times to have a better quality. My father started to distill since the beginning. He started with just a few vineyards (1.5ha, now 10ha), but it was not enough to live off. That's why he picked up lot of different fruits and distilled them to have a complementary income, and we now still continue this tradition. The eaux de vie de pinot is round with very fine aromas, good for customers who like a spirit which is easy to drink."
The Durrmann family had made wine for generations as small farmers. Grandad had moved away from farming to become a shoemaker but still kept a few vines on the side. André decided to move back to farming in 1979 and pieced the domaine together from abandoned vineyard sites that were hard to work and no longer commercially viable. Son Yann has worked in the domaine since he was a child and officially took over the business a year ago. André was among the first wave of organic winemakers in Alsace, converting in 1998. Yann has taken this a step further applying a more natural approach in the cellar.
