Winemaking techniques: The vatting of the destemmed harvest is more than 50 days. The alcoholic fermentation completed: the marc is totally immersed. The delicacy of the infusion and the length of maceration are preferred to violent and rapid mechanical extraction.
Ageing: It is after an aging of 18 months and a collage with the white of fresh egg (glue of the fine red wines) that is done the bottling. The guard of this wine is 8 to 15 years in general.

Soil: The limestone soils of our hillsides, exposed to the south, of the Grouas and Complans are ostracated marls, clay-limestone soils with oyster shells (upper Cretaceous Cenomanian). The Cabernet Franc finds the regular water supply responsible for its excellence.
