Winemaking technique: Hand-harvest by selective sorting of overripe yellow grapes. After a rigorous selection in the vineyard, the grape harvest is delicately pressed. The fermentation takes place in oak barrels.

Ageing: From its juicing, to the assembly of the different barrels 12 months later, the wine does not leave the barrels. Every 15 days, the lees are resuspended by stirring. Bottling is done after 18 months.
