2015 VDF ‘Le Cuvee de l'Hotel’
We have had this in our cellar for a while now. The longer it sits, the better it seems to get. A blend of a two-day maceration of Gamay and a direct press of Hybrid 54-55. No added sulphur. Matt’s red initially went volatile, he then blended it with some Gamay from Benoît Landron and left it to come back around.

Hand-harvested, crushed & fermented in fibreglass. Light punching (pigeage) morning and evening for seven days then pressed. The first racking was completed on December 25. Aged 8 months in fibreglass
Ageing: Eight months in fibreglass
Sulphur: blended with lightly sulphured grapes from Benoît Landron
Soil: Conglomérat d'Ingrandes
