Winemaking: Hand-harvested. Natural yeast. Maceration in vat for 10 days, then removed from the vat and pressed before the fermenting juice is put in amphora with the addition of 1/10 of the volume Cabernet Franc berries. Aged 12 months in 500-litre Tuscan amphora. They wanted to be as close to the earth as possible in vinification; the use of amphora is key.

Soil: A rich soil made of eruptive and metamorphic rocks, over a layer of sand, pebbles and clay, on top of granite and gabbro
Yield: 35hl/ha
Seventh-generation farmers Vincent and Stephane farm around 25 hectares, in and around the medieval ‘Cru’ village of Clisson. Organic conversion began in 2009. They make bright and pretty wines, with a salty vein running throughout. They have recently started experimenting with a few Tuscan amphora and gentle macerations.
