Winemaking: Hand-harvested. Natural yeast. Maceration in tank for 13 days, 70% de-stemmed, the rest in whole cluster. Pressed juice and free-run juice are blended. Aged for 6 months in fibreglass tank. Light filtration, unfined.

Soil: A rich soil made of eruptive and metamorphic rocks, over a layer of sand, pebbles and clay, on top of granite and gabbro
Yield: 45 hl/ha
Seventh-generation farmers Vincent and Stephane farm around 25 hectares, in and around the medieval ‘Cru’ village of Clisson. Organic conversion began in 2009. They make bright and pretty wines, with a salty vein running throughout. They have recently started experimenting with a few Tuscan amphora and gentle macerations.
