Hand-harvested on 3 October 2016 and bottled in May 2017. Four days whole-bunch maceration. Indigenous yeasts, started partly on the skins, fermented in 1,000-litre wooden barrels. Unfiltered. Aged 7 months with batonnage every two weeks in 1,000-litre old oak.

Acid: 6.2g/L Residual sugar: 0.5g/L

Sulphur: none added

Climate: Mediterranean climate with less rain (450mm/year, with peaks in the winter)

Soil: Loess, loam with a lot of shell limestone
