In 2014, Michael and Melanie took over a Müller-Thurgau-vineyard from a colleague; the vineyard has a hut in the middle of it which they and local conservationist, Christian Söder, thought looked like a perfect home for bats. Several bat-boxes were installed, the guano is sold as fertiliser, and a share of the revenue goes back to protection of bat habitats. The label shows the rare grey long-eared bat.
These grapes were harvested in September 2016 and bottled in February 2017. The grapes were picked on one of the first harvest days as Pinot Meunier benefits from a solid acid-backbone. Semi-carbonic maceration for 7 days, gently pressed in a pneumatic press, malolactic fermentation and aged on lees in steel.
