"From a single vineyard; the Heiligenkirche. The name came into being through the old pilgrimage chapel which is in the middle of the single site. It’s famous for the high amount of limestone in the soil which helps our Pinots to gain good structure and a salty finish.
Manual harvesting of the 40-year-old vines after a wet summer and a perfect sunny harvest. 10 Days cold maceration, 14 days mash fermentation (partly whole bunch). Wild yeasts, aged in old oak barrels for 18 months. No added sulfites. Unfiltered. Bottled in March 2018."
