Hand-harvested in early September. 12 hour pressing. Racked and then a slow fermentation (until November/December). On lees until the bottling in spring with Marc Pesnot’s’ bottling machine.
After being hit hard by frost Matt and a group of friends (Jacques Caroge and Johan Chasse) found an abandoned vineyard of old vine Melon de B. The owner was about to rip it out so the petitioned the town hall to save it for this year. They pruned it in May together and harvested together then splitting the crop.
