Winemaking: Winemaking: De-stemmed, followed by maceration in temperature-controlled stainless steel vats at around 25°C, for 7 days.
After alcoholic and malolactic fermentation, the wine is regularly racked over the winter to naturally clarify.
Six months in stainless steel prior to bottling with less than 50mg/l sulphur at bottling.

Soil: Gravel and silt, on granitic bedrock
The Paquereau family has been farming since the early 1900s. Viticulture became the sole activity of the Domaine when Albert and his wife Odile took the reigns in 1973. Since 2000 and 2006, Cyrille and Sylvain; the next generation now run the family farm. They began conversion to organic agriculture in 2011.
