Winemaking: Named for the vineyards location beneath the Pech de Roziès mountain, with bat boxes recently installed, pressed directly after two days in the cold room, fermented in stainless steel. 4/5ths aged in tank, with 1/6th in demi-muid, both for 6 months.
Sulphur: 10mg/l at bottling
Soil: Brown schist
Céline Peyre and her partner Alexandre Gressent returned to her family home in 2015 to begin Domaine Balansa, vinifying the family's 14 hectares of old vines in the Hautes-Corbieres themselves after several generations of selling the fruit to the local co-op. Now working biodynamically with little to no sulphur in the cellar.
