Winemaking: A tank of Grenache from Mataburro is blended with a tank of 2P Production Mauzac whilst a combined 25g residual sugar remain, bottled mid-October. Disgorged in early March, 4g/l residual sugar remain.
Mataburro Grenache: hand-harvested, 3/4 day infusion before pressing to tank. 5mg/l sulphur added before travel from Perpignan to Gaillac.
2P Production Mauzac: hand-harvested, pressed directly to tank to begin fermentation. 10mg/l sulphur before bottling.
