We're very pleased to have received new wines direct from the limestone-caves of David Foubert Saumur Puy-Notre-Dame!
One of our triumvirate of growers in Saumur (Melaric, L'Austral, Folle Berthe) working with beautiful parcels of Cab Franc and Chenin that once belonged to the region's retired biodynamic godfather: Philippe Gourdon.
Formerly a Parisian journalist, David later moved to Saumur for a life change and to study winemaking. Under the eye of Aymeric Hillaire and Melanie Hunin at Domaine Melaric, David's first vintage in 2014 was made in their cellar.
Now with a cellar of his own: a lovingly restored cave cut into the same Tuffeau that gives the areas wines their signature mineral line, David works slowly and delicately, maintaining the biodynamic agriculture in the vineyards, and a deft hand in the cellar. Grapes are pressed gently, and wines are raised in barrel for long periods, with yet more time in bottle before release.
We've received three special releases from different vintages, and have the following available:
FOLLE BULLE 2022 is David's direct-press pet-nat of Pineau d'Aunis, a warm dry year putting a little more fruit on its frame. GRAND BERTHE 2017 is Cab Franc from a beautifully balanced vintage, a parcel over flint and clay, aged for 3 years in barrels and a year in tank. AMANDIERS 2018 is 60-year-old Chenin on tuffeau, with a great salinity very particular to this parcel. The '18 had a long slow fermentation in barrel over 48 months, finishing in March '23 and bottled the summer of that year. It's developed in a fascinating way, with quite atypical exotic fruit.
