Winemaking: Lori planted these vines in the vineyard of his friend Olivier, the same whose older vines are picked for Saturday Night At Souvi and Vivant A Souvi. They have been managed by Lori and his team since, with a focus on biodynamic agriculture as with the rest of the plots back in Valliguieres.
Koalitre is made to the same method Lori practices for nearly all his reds now, whole bunches are topped up with a little direct pressed juice, in concrete tank for a 3 week infusion. Bottled unfiltered, unfined.

Lori Haon started farming 15 hectares in Valliguières in the Gard in 2015. He is a young winemaker who trained in Burgundy, Alsace and Champagne. Lori is committed to a respectful approach to his terroirs, without the use of chemical and synthetic products or weedkiller. His wines are vinified without the use of sulfites.
