Winemaking: Hand-harvested, with the Chardonnay pressed directly, and 45 litres of some 9-day macerated Bacchus topping up the barrel. Fermentation and ageing continued in a 228-litre old Burgundy barrel for 10 months, with some lees stirring during that time. Bottled in accordance with the lunar calendar, with no additions. Made collaboratively with Nicola & Daniel at Offbeat Wines.
