Winemaking: An assemblage of three varieties from four vineyards over two years:
Pinot Meunier (45%) was sourced from two vineyards over two vintages, one in Crouch Valley, Essex (the Field Notes vineyard) and another in Dorchester. A three week carbonic infusion-maceration for everything, with the 2021 (37%) aged in stainless steel and the 2020 (8%) (the press-juice from Field Notes 2) aged in neutral Burgundy barrel.
Pinot Noir (41%) from 2021 was grown by our friends Lucie & Jules at Ham Street, Kent, most (32%) saw a five-day whole bunch maceration before pressed to Burgundy barrels to complete fermentation and ageing. The remainder (9%) was hand de-stemmed and fermented as a semi-carbonic maceration for two months in fibreglass before heading to barrel.
Triomphe (14%) was from the nearly-wild vineyard (picked for Wild Juice Chase) in the Test Valley, Hampshire, from the 2021 vintage, everything underwent a three week semi-carbonic maceration before being pressed to barrel to continue fermentation and ageing.
Blended and bottled via gravity this summer in accordance with the lunar calendar, with no fining, no filtration and no additions.
