A light pet nat made from a 60/40 blend of Orion and Phoenix, grown on a small 1 hectare vineyard in Oxfordshire.

Winemaking: Whole bunches were gently pressed over 7 hours, and co-fermented with indigenous yeasts in stainless steel. After a long, slow fermentation, the wine was bottled via gravity with no fining, filtration, or additions of sulphur. Not disgorged, 565 bottles made.

Soil: Lime-rich loam over limestone
Offbeat wines is the inspiring project started by Daniel Ham in 2018. Using organic fruit from vineyards in Hampshire and Devon. Joined by his wife Nicola in their own cellar in 2020, these former marine biologists are about as close as you will get to garage winemaking in the UK. Wines are made with no additions and are among the most exciting being made in England.
